WHILE WE WAIT - ISLE OF RAASAY DISTILLERY


While waiting for the new Raasay whisky, they have crafted a single malt, aptly called Raasay While We Wait (and you'll see that the wait will be worth it!), that demonstrates their whisky making skills and offers a tantalizing taste of what’s to come from the Isle of Raasay Distillery.
This limited edition whisky combines two expressions from one distillery – one peated, one unpeated – finished in French oak Tuscan red wine casks. The result: a single malt whisky of uncommon provenance.
TASTING NOTES
NOSE: A welcome smokiness on first nosing, mixed with red berries, lemon and grassy notes. With more time; pear, tangerine and melon.
PALATE: Dry peatiness on the palate, mixed in with red wine notes. A good dash of orange zest from the nose.
FINISH: Oaky and buttery finish.
FOOD PAIRING: Pairs well with Sconser scallops, smoked salmon, game, grouse,
woodcock, venison, creamy blue cheese, bacon, haggis.

Invest in a signature cask from Isle of Raasay Distillery and be a part of the history of this company!
The signature Isle of Raasay Single Malt is comprised of two spirit types – heavily peated and unpeated spirit – matured in three distinct cask types – ex-Woodford Reserve Rye, fresh virgin Chinkapin Oak and ex-Bordeaux Red Wine casks. These three signature cask types are available to purchase with a choice of peated or unpeated spirit type.
In addition to the signature casks, the distillery offers other casks in limited quantities. All casks are filled with Isle of Raasay new make spirit from the distillery and matured in their warehouse on the island of Raasay, maximizing the effect of the Hebridean climate on their single malt whisky.
All casks have the choice of a peated or unpeated spirit. Casks can be matured for longer than 10 years at a small extra cost with the distillery.

The first 45 casks ever filled at the Isle of Raasay Distillery were American oak bourbon barrels.
The lightly peated inaugural Isle of Raasay spirit was matured in these casks before being transferred to finish maturation in the highest quality Bordeaux red wine casks.
These historic bourbon casks, rich sweet vanilla and butterscotch flavours, are now being made available as part of the Raasay Rising cask offer.
A unique experience is offered to you:
Your purchase entitles you to come and fill your cask personnaly while "hiding out" for a night on the Isle of Raasay in their luxurious Victorian villa. If you cannot make it to Raasay to fill your cask, they can fill it on your behalf and you can visit your sleeping single malt later.
